I know I say posting what I eat seems really odd to me, but friends and readers say they love to hear about foodie stuff, so I thought I's share my snack/lunch today.
I give you the BAC: Beet, avocado and cheese on brown rice bread!
Now before you say, "Now that's just friggin' weird!" Hear me out. Cheese? Yum. Avocado? Yum and healthy! Beets?! Yep. Beets are like cilantro. You are either pro or con. Scarf or barf. Personally I love them! My husband is a convert and even likes to eat the Hedge House Salad at Hedge House on Division. Or so he says, and really just wants to go drink beer and knows I'm down with that.
Recently I heard a story on NPR the about the much maligned beet. Seems beets are making it onto the plates of chi-chi restaurants in this country and Australians eat them on sandwiches like we do tomatoes. So, see! Not so weird after all.

Here's a suggestion I got from a reader.
Marinate beets in a simple herbed balsamic vinaigrette before sticking them on the grill for a delicious and healthy barbecued side dish. These easy balsamic barbecued beets are vegetarian, vegan, and gluten-free. Eat your barbecued beets as is, or add them to a green salad or even a pasta salad.
Ingredients:
1/3 cup + 1 tbsp balsamic vinegar
1 clove garlic, minced
1/2 tsp rosemary
1/4 tsp savory
1/4 tsp basil
1/4 tsp sage
1/4 tsp thyme
1/4 tsp marjoram
4 large beets, sliced into 1/2 inch thick circles
Preparation:
In a wide flat dish, whisk together all the ingredients except the beets and 1 tablespoon of balsamic vinegar until well combined.
Place the beets in the dish, coating well with the vinegar and allow to marinate for at least one hour.
Wrap beets in foil, drizzling with extra marinade and folding the foil to seal well. Grill for 20 to 25 minutes, or until beets are soft.
Remove beets from foil and place directly on the grill for another minute or two.
Drizzle with additional balsamic vinegar just before serving.
Love the sandwich idea and now can't wait to try those grilled beets!

Yeah, we had just flown in to Cairnes, Australia, and our RV (sorry, "camper van") wasn't quite ready to go. So we went across the street and got some lunch and to kill some time. And lo and behold, the hamburgers came with beets in them! And that was about 11 or 12 years ago.
That's one of the fun parts of going outside our borders. You find all kinds of different ways with food!
